Vegan Sloppy Joe

Ingredients:
17.6oz of steamed lentils (1 package of TJ already steamed lentils).  
24oz of ketchup (I Bottle of TJ organic Ketchup)
1C of Dill Pickle Juice
I large onion small dice
I large bell pepper small dice
1/2 C of Orange Juice or Pineapple Juice
1 TBS of minced garlic
1 TBS of yellow mustard
2 TBS of hot sauce (Tabasco or something similar)
1 TBS of oil (which ever kind you use when cooking)
2 TBS of Honey
Salt and Pepper to taste.  
NOTICE - I never used actual measurements when I made this recipe so what you see above are very good estimations.  

Preparation:
In sauce pan heat oil on med/high heat then add diced onion and peppers. Allow vegetables to sweat/soften (cook without color) and stir frequently.  Stir in garlic garlic.  Add honey and juice to pan.  Stir frequently and allow liquids to reduce and caramelize.  Caramelization is reached when liquid is golden brown and syrup like.  Now add the pickle juice - this acts like a vinegar and will deglaze your pan, use wood spoon or heat safe spatula to stir and help release caramelization off sauce pan.   Bring the liquids to a simmer and let reduce again.  Add ketchup, mustard, and hot sauce and simmer for 5 minutes medium/low heat.  Add Lentils or cooked ground meat and simmer.  Ready to eat after it simmers for 5 minutes, but the longer the simmer the better the flavor.    

TIP:  Cook ahead of time and put all ingredients in a crock pot on low for lots of hours for a much more matured flavor profile.
